I'm thinking of possibly adding a little feta cheese if I ever make these.
A big crowd pleaser if you have a little time to prepare them:
18 roma tomatoes, cut in half and seeded
olive oil
fresh herbs
goat cheese
Heat oven to 275.
Toss tomatoes in olive oil and whichever herbs you choose, place skin side down on cookie sheet and bake for roughly 2 1/2 hours. Serve with goat cheese. They roast and sort of caramelize and are sweet and delicious! I got this recipe from a friend and get raves every time I make it.
Another one that takes absolutely no effort but is yummy:
Brick of cream cheese
(Preferably) homemade pesto
Crackers of your choosing (I usually use Carrs or something like them)
Top the cream cheese with the pesto and dip away!

Boy ,am I disappointed - thought this was a new thread and was going to get some new ideas - I recently watched the " Barefoot Contessa", Ina Garten (she has a very interesting background, her husband Jeffrey does too, for anyone interested in that).
She made something called 'elephant ears'. It was puff pastry spread with sundried tomato, pesto ,parm cheese mixture, folded, and baked and cut into little 'elephant ears'. Was right up my alley. I will try to find the recipe.

Home made bread is always a winner in my book and add some olive oil and basil to dip in as well.

Bacon Wrapped Weiners
2 lbs Little Smokies sausages (we use Hillshire Farm)
1 lb bacon (real bacon, no turkey bacon or maple flavored)
2 cups light brown sugar
Line large baking sheet with foil (we don't always do this, but it's easier for cleanup). Cut bacon into thirds, resulting in several 3" strips. Wrap each weiner with bacon, line them loosely in the pan as you go. Cover with brown sugar, it'll seem like a lot of sugar, but it cooks down Bake 375 for 45 minutes. Broil at the end until top is crisped.
Sausage Cheese Balls
2 lbs regular ground sausage
1 1/2 cups all purpose baking mix
4 cups shredded sharp cheddar cheese
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 tsp. garlic powder
Preheat oven to 375%. Mix all ingredients. Form into 1 inch balls. Bake 15 minutes on ungreased cookie sheet until golden brown. Makes about 6 dozen. Sausage cheese balls can be frozen uncooked.

Southern Favorite:Sweet Potatoe Biscuits
Ingredients
1 1/4 cups all-purpose flour
2 heaping tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup mashed cooked sweet potatoes
1/4 cup (1/2 stick) softened butter
2 to 4 tablespoons milk (depending on the moisture of the potatoes)
Directions
Preheat the oven to 450 degrees F.
Sift together flour, sugar, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.)
A really quick and easy appetizer is to take the little cherry tomatoes and slice them in half. Buy the small motza balls that are about the same size as the tomatoes and slice it. Sandwich a slice of the cheese between the cut in half tomato. Stick it together with a toothpick through it. Place them all on a platter and drizzle with olive oil and pepper! Delicious, healthy, and bite sized fun![]()
