    Default Kick Ass Salsa Recipe

    Salsa (the basic recipe from a gal I work with)
    Chop:
    2 Quarts tomatos
    2 Lg Bell Peppers
    4 Lg Halopeno pepper (for mild)

    Mix and Add:
    1/2 cup brown sugar
    4 Tlbsp corn starch
    2 Tlbsp salt
    1 tsp garlic salt
    1/4 tsp black pepper
    1 cup white vinegar
    1 - 6 oz can tomato paste

    Cook until thick; process 10-15 mins.

    What I do different:

    I ussually make a double batch adding many more peppers and yellow onions. I like to use a variety of peppers and include 1 package of chipotle chilies chopped with 1/2 cup fresh garlic. I generally leave out the garlic salt and use just powdered garlic; and use only half the salt. Sometimes I add more tomato paste; esp. if I am low on fresh tomatos. This recipe is forgiving - but the sauce part is terrific! I have made this with a variety of tomatos also but have the majority the roma type.

    Another great variation: to 1 quart salsa (fresh or canned); add 1 package of sowthwestern corn (frozen) and 1 to 2 cans of seasoned black beans!

    Another good recipe for your tortilla chips!

    1 can rotello tomatoes, drained (already has peppers in it for seasoning)
    2 cans mexican corn (southwest as you said...frozen would be good too) drained
    1 pkg cream cheese
    1 cup mayo

    mix all together, refrig over night and serve with chips.........yum!

    Looks very good - I have't heard of rotello tomatoes? Is that a brand name??

    Rotel is a brand of tomatos and peppers.

    Jalapeno is a type of pepper.

    lol, anything with a package of Cream Cheese and 1 cup of Mayo is bound to be good!

    Thanks for correcting my typo Paula Jo........and you are so right. Fat free and calorie free is the best ones..........BUT!!! You can now use Kraft Mayo made from Olive Oil for a "healthier version"!

    This is a scrumptous appetizer!

    I just tried some of that with the OO - Not too bad - BUT the regular Mayo is still the best tasting for the BLT's - which I can not even start or I'd eat the entirer loaf of bread!!!

    There is nothing like a home grown tomato BLT. I just allow myself one package of bacon and once that is gone no more BLT's. And I don't schedule cholesterol blood tests during this time!!

    I am going to try your salsa recipe this weekend. Sounds great.

    Add some TigerPaw-NR Habinero chilli peppers, which make Jalapeño seem like candy, and it will really kick butt.

    Moving to the Asian species of hot, I love the thrill I get of eating sushi with some brain-melting wasabi. Can't be weak either. It hurts so good--but just make sure you have a cold beer or Magarita or some such drink around. If that doesn't clear your sinuses, nothing will.

    I do use those - this year I used 5 different types of peppers!

    I make a big pot of beef stew just about every week (so I know Hugby is getting his veggies). I have started crumbling HEB brand Jalapeno Tortilla Chips in our bowls instead of serving crackers (it is too hot to bake cornbread).

    This is the most amazing taste sensation!!!!!!!!!

    Sorry, non-Texans, I have not found a comparable name brand.

    Yummo!!! That sounds very good indeed! Just the extra salt would be a worry.

    mmm this is making me hungry to read this thread! But in response to all the fantastic salsa recipes - my favorite dip to have with chips is a simple guilty pleasure one. Take one can of chili, and one big hunk of veveeta cheese - melt it down, heat it up, stir it all together - amazingness!
