    Talking OK, I'll start...

    I love to cook and I love to eat - one of my favorite recipes, just in time for the Holidays, is Whipped Sweet Potatoes and Bananas with Honey. I saw one of my favorite Chefs, Tyler Florence, prepare this last year on his Ultimate Thanksgiving show. Not only is it delicious, it is a visually beautiful dish.

    Whipped Sweet Potatoes and Bananas with Honey

    Ingredients

    * 5 medium sweet potatoes, scrubbed
    * 4 bananas, unpeeled
    * 1 cup (2 sticks) unsalted butter, at room temperature
    * 1/4 cup honey
    * Kosher salt
    * 1/2 cup all-purpose flour
    * 3/4 cup dark brown sugar
    * 1 1/2 cups pecans, chopped

    Directions

    Preheat the oven to 375 degrees F.

    Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.

    When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.

    In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot.

    Sounds good. I am bummed b/c school and work have sucked the culinary life out of me. I so miss cooking just for the joy and love of it. If I can just get through this term, then maybe I'll be able to get into it again. LOL, my family tells me my one-gourmet-wonders get lost--I just can throw stuff together and it all works out. Problem is, I haven't been writing down what I'm doing. They can't replicate what I do--and uh, when I try something again, it is usually at least a bit different. LOL. It's quite the joke in my house.

    Edson - I'm usually the same way. I'm terrible with recipes because I'm so literal that I don't dare vary from the recipe in any way - so I end up driving myself crazy.

    Ryan - I'll just go ahead and invite myself over now. What time is dinner?

    That sweet potato/banana dish sounds fantastic. I am definitely making it for T'giving. My sisters and I have discussed the menu and are really looking forward to this dish.

    These dishes in the previous posts sound delicious, will definitely have to try them! I'll add in my two cents as well- homemade pesto pasta! Cook the pasta as you would, feel free to add some sauteed mushrooms or other veggies as well. And then be generous with the pesto sauce - blend up basil leave, pine nuts, garlic, chucks of parmesean cheese and add in olive oil to make it saucey - sooooo good!

    Unquestionably, I will share one of my recipes."CHICKEN OLE"
    1, box of Goya Rice (Spanish Yellow Rice) follow box directions, while the rice is cooking get One bag of Tyson's Time Trimmers (or Chicken Breast Strips) Cook the chicken on a dry skillet until is slightly brown, then add a whole bottle of Balsamic dressing stir, then add one 14.5oz can of Diced tomatoes in garlic any brand, stir again, then add 2 heads of fresh or frozen broccoli chopped, at this time you can also add 1/2 cup of Spanish olives with pimentos, stir then cover and let it cook for 8min. Finally serve the Chicken over the Spanish Rice with a slice of garlic bread and wine of choice...Enjoy~
    P.S. if you don't like broccoli you can use green beans. In addition, you can save the chicken leftovers in the freezer and make some pasta and serve it in the same manner. OMG I'm hungry just thinking of it
