Corn-bread muffins: … Makes 12 Easy … (Ingredients:.. 8 oz corn-flour and 2 oz self-rising flour (total of 10 oz flour); … 4 oz honey, or maple syrup, or sugar, or sugar-free sweetener ; … 6 oz olive oil; … 2 eggs and 1 carton fruit-flavored light, fat-free yogurt; … diced red bell-pepper; … some grated orange zest; … 3 oz raisins; … 1 oz dried cranberries; … 1 oz chopped cashews or sliced almonds; … Steps: (1.) In a bowl, mix the dry ingredients with the flour, … (2.) Whisk the eggs, oil, sweetening agents till nicely-blended, stir in the yogurt till well-mixed; … (3.) Make a well in the center of the floured mixture bowl, and pour in, the whisked ingredients; … (4.) Add 2 tablespoons of orange juice ... (5.) Add a pinch of cinnamon and mix the batter again; …. (6.) Pour into a greased or non-stick muffin pan size for six muffins; … (7.) Bake at 350 degrees for 17 mins. Check for done-ness; (8.)Serving: Place into muffin cases. Ready to serve and enjoy.     Another healthy idea - fresh salads until the end of your shift:
    Into a bowl of Spring mix salad greens, toss in peeled and 1/4 inch size-diced carrots, whole blueberries and dried cranberries. Refrigerate. The salad will stay fresh all day.
    Just before you eat it, add your favorite dressing and nuts, croutons/other fruits of your choice.
